Steamed Scallops with Garlic and Vermicelli

The riches of the sea bring good fortune for Chinese New Year
Preparation: 15 minutes:
Dressing the Scallop Shell
1. Soak a handful of rice vermicelli in hot water for 5 minutes. Drain the water and use scissors to cut into 5 portions – leave aside
2. Finely chop the garlic
3. Place a forkful of vermicelli on the shell
4. Place the whole cleaned scallop on top and then sprinkle a tsp garlic over the scallop
The Sauce:
1. Place the chillies, ginger and coriander in a small sauce bowl
2. Fill the bowl with light soy sauce, add the sugar and a dash of sesame oil and mix well
Cooking: 3 minutes:
1. Steam the scallops in their shell on high heat for 3 minutes depending on the size
Serving: Serve as a starter with the sweetened chilli sauce on the side
