FISH KORMA

INGREDIENTS:

455g (1 Ib) haddock or pollack fillets, fresh or defrosted, skinned and cubed
 
1 x 15ml spoon (1 tablespoon) sunflower oil
 
1 small onion, chopped

1 clove garlic, crushed
 
1 x 430g jar curry sauce e.g. korma
 
Salt and pepper
 
2 tomatoes, quartered
 
3 x 15mI spoon (3 tablespoons) fresh chopped coriander

 

METHOD:

Microwave power: 800 Watt
 
1 Place the oil, onion and garlic in a suitable bowl, cover and cook on HIGH for 1 minute.
 
2. Add the sauce. Cover and cook on HIGH for I minute, add the fish and seasoning. Cover and cook on HIGH for 2 1/2 minutes.
 
3. Lightly stir in the tomatoes and coriander. Cover and cook on HIGH for 2-3 minutes.
 
4. Serve with basmati rice or naan bread.
